Two Ingredient Dough Blueberry Sweet Rolls

We discovered the wonder of two ingredient dough a few years ago. While a lot of people find the appeal in that it’s low fat, I really love the simplicity of two-ingredient dough. I usually always have self-rising flour and greek yogurt on hand, so I always am able to make this dough. The simplistic, slightly chewy base allows for a lot of versatility. I’ve used it to make bagels, flat bread, and pizza. A lot of recipes you find are for more savory options for the two ingredient dough, but I wanted a healthier take on sweet rolls. While I love a good cinnamon roll, they’re full of butter and sugar, and they are not exactly a perfect fit for a daily breakfast. These two ingredient dough blueberry sweet rolls, however, don’t use butter, use very little sugar, and the frosting is optional.

Trick to Two Ingredient Dough Sweet Rolls

While there are not many recipes where I insist that you use a stand mixer, this is one of them. The dough hook in the stand mixer really helps to bring the dough together. It’ll look too sticky at first, but after beating it for about 3-5 minutes, it should come together as a ball. If it doesn’t, add more flour in 1/4 cup increments.

I also find that if you are using a softer flour (like White Lily) you should just add that 1/4 cup to begin with. If you’re not sure what that means, hold a tablespoon of your great value flour and compare it to something like White Lily. When you rub it between your fingers, there is a noticeable difference in the texture. White Lily is finer, so it comes off feeling “softer.” This is why people love this flour for biscuits because of that beautiful texture. While softer flours still work well in two-ingredient dough, you will find yourself using a bit more flour to get that dough to fully come together.

Topping It Off

Now, if you are make these two ingredient dough blueberry sweet rolls for ease and not for them being diet friendly, I would recommend adding butter to the frosting. Currently, this is mostly cream cheese that has been slightly sweetened and thinned out. It doesn’t get all melty and gooey like a buttercream would. Adding even like two tablespoons gets you to a more traditional texture for the topping.

Using two-ingredient dough, these sweet rolls are non-fat and easy to make without sacrificing the delicious flavor of sweet blueberries.

Ingredients

Two Ingredient Dough

  • 2 cups self-rising flour
  • 2 cups non-fat Greek yogurt

Blueberry Filling

  • 7 cups frozen blueberries
  • 1/4 cup sugar

Cream Cheese Frosting

  • 4 oz non-fat cream cheese (room temperature)
  • 1/4 cup powdered sugar
  • 2 tablespoons heavy cream, can use water instead

Method

  • 1)

    In a saucepan, place ingredients for blueberry filling.  Place over low-medium heat and cook until thickened, about 20-30 minutes.  Stir frequently.  Set aside and let cool completely.

  • 2)

    Preheat oven to 350F.  In a stand mixer, combine greek yogurt and flour.  Mix on low speed with dough hook until a ball begins to form (about three minutes).  If dough wants to stick to bottom, add in more flour until it releases from the side.

  • 3)

    On a floured surface, roll the dough into a large rectangle about 1/2″ thick.  Spread filling onto dough.  Taking the long edge, roll the dough towards the other long edge until a long, spiral of dough is formed.  Cut into 12 pieces and place onto lined baking pan.  Place them directly next to each other, so the sides are touching.

    Bake for 20-25 minutes until the edges begin to turn a light, golden brown.  Let cool slightly.

    In a separate bowl, combine ingredients for frosting.  Spread onto warm rolls.  Serve and enjoy!
